$5 Dinners Week of 8/22 $5.07 Average Cost

My goal is to provide dinner for my family for an average of $5 except on special occasions. We don’t have to eat beans and rice to accomplish this goal!  I shop the grocery sales each week.  Then I plan my menu based on the foods I have already at home (at a great price). I balance more expensive meals with less expensive ones. We typically only cook a main dish 4 or 5 times a week. Each main dish cooked will serve 4-6, and the leftovers will be for easy dinners on the weekend, or to freeze for another week. This cuts down on cleaning, cooking, and meal planningsaving us lots of time!

Crockpot Salsa Chicken, apple slices and mandarin oranges
1 lb. chicken thighs @ 1.67
3/4 jar of salsa @ 1.41
1 can corn @ .52
1 cup black beans @ .20
2 apples @ .78
2 small cans of mandarin oranges @ 1.00
Total Cost: $5.58


Butterfly Shrimp, Mashed Potatoes, Sweet Peas and Bananas
1 box of shrimp @ 3.50
3 potatoes @ .55
1 can sweet peas @ .24
2 bananas @ .42
butter, garlic salt and milk for potatoes @ .10
Total Cost: $4.81


Strawberry Pancakes and Sausages with Bananas
12 little sizzler’s sausages @ 1.00
pancake mix @ .33
1 pkg strawberry muffin mix @ free (super 1 food club Q)
syrup @ .25
4 bananas @ .84
Total Cost: $2.42

Chicken Quesadillas, pineapples, cheese dip and chips
8 tortillas @ .40
1 can rotel @ .77
velveeta for dip @ 1.00
chips @ .25
3/4 lb. chicken pulled @ .84
shredded cheeses (fiesta blend) @ 3.00
1 can pineapples @ .83
Total Cost:  $7.09


Oven Fried Chicken Strips (I’m using this recipe), green beans and mashed potatoes, leftover pineapple and mandarin oranges
1 lb. chicken tenderloins @ 1.67
1 cup bisquick @ .20
1 egg @ .08
1/4 cup grated parmesian cheese @ .33
1 can green beans @ .25
2 potatoes @ .55 (we will mash enough for both nights together instead of doing the work twice)
butter, garlic salt and milk for potatoes @ .10
leftover pineapples and mandarin oranges @ free
Total Cost: $3.18

Stanley’s BBQ, Baked beans, Apples
3/4 lb. BBQ @ around $5 (using a $5 off voucher)
2 cans pork and beans @ 1
brown sugar and BBQ sauce @ .20
bread (for buns) @ .32
2 apples @ .80
Total Cost: $7.32
