Dishing It Up Dinner Recipe Chicken Biscuit Casserole

This week we’re focusing on casserole dishes. We’ve got some great dinner recipes for you: 3 main dishes and 3 side dishes, along with 1 fabulous dessert to hopefully give you some inspiration as you plan your menu for the week.

My chicken biscuit casserole is a frequent dish on our table.  It’s easy to throw together using chicken that I’ve baked, pulled and frozen for easy meals such as this one.  I bake up twice as much as my family can eat for dinner and we’ll freeze the other half for another meal.

Ingredients:
1 lb. baked and pulled or chopped chicken
1 regular can cream of chicken soup
1 cup sour cream
3/4 cup milk
about 2 oz. shredded cheddar cheese
8 butter tasting biscuits
1 TBS minced onion
2 tsp black pepper
2 tsp montreal chicken seasoning

Directions
Preheat @ 350 and grease bottom and sides of a cake pan or glass dish
Combine all ingredients except cheese and biscuits in a large bowl and mix well
Pour mixture into dish and bake for 25-30 mins.
Add biscuits on top and sprinkle with cheese.  Bake for an additional 20 minutes or until biscuits are done.
