Easy Twice Baked Potatoes Recipe

Our kids like mashed potatoes much better than sliced potatoes.  I like combining the two ideas and serving twice baked potatoes.

Truth be told we like the stuffing so well that we often make our mashed potatoes with this recipe too!

Ingredients
4 large potatoes (I always use Russets)
1/2 cup sour cream
1/2 cup milk (whole is best)
3/4 cup grated cheddar cheese
4 Tbs butter
bacon bits

Directions:
Wash and pierce potatoes then “bake” in microwave using your baked potato setting.
Let cool.
Slice in half longways.
Scoop insides of potatoes out leaving about 1/4 inch of potato in the skins.
Mash potato insides with all other ingredients.
Fill skins with stuffing.
Bake in toaster oven for about 20 mins at 350 degrees.
Top with bacon bits just before serving.

  1. Oh I’ve done this one before in a very large batch and frozen them. Then you just pop them in the oven for a side any time. I had actually forgotten about that, and i just bought a 10 lb bag of potatoes. great idea!
