Our family usually eats dinner for an average of $5 a meal or less. Some meals are more expensive and some are less expensive, but it all evens out and we don’t eat beans and rice. This is one of our more expensive meals that we enjoy from time to time.
Ingredients
1 1/2 tsp Herbs de Provence – (can substitute rosemary with a little thyme and savory)
1/2 cup shelled and chopped pistachios
1 lb pork tenderloin (we usually use Hormel Always Tender 24 oz.)
2TBS olive oil
Directions:
Place shelled and chopped pistachios in a bowl and mix with Herbs de Provence. Mix well.
In a small skillet over medium heat add 1 TBS olive oil and pistachio mixture. Cook until pistachios just turn golden brown. Remove from heat and divide.
Slice pork about 1/2 in thick.
In a separate skillet over meduim heat. Sauté pork in 1 TBS olive oil for 3-4 minutes until brown. Turn pork and continue sautéing for another 3-4 minutes until brown. While cooking, spoon approximately half of the pistachio mixture over the pork.
After cooking, spoon additional pistachio mixture onto the pork and serve.
