We all love the holidays and delicious food. But a few days later, we’re not as gung ho about eating yet another round of Thanksgiving dinner. Here is one idea for spicing up your Thanksgiving leftovers.
Shepherd’s Pie
Ingredients
leftover turkey pulled or chopped, split into two equal portions
leftover candied sweet potatoes, split into two equal portions
leftover cranberry sauce or whole cranberries
toasted pecans, chopped
1/4 tsp nutmeg
1 tsp cinnamon sugar
Directions
Place ingredients in large glass bowl in the following order:
turkey, sweet potatoes, cranberry sauce, turkey, sweet potatoes
mix nutmeg and cinnamon sugar together and spread evenly over top
top with chopped toasted pecans
Serve cold or heat on medium power if preferred.
Got too busy with my story. I meant to say that I would use dressing or mashed potatoes in place of the sweet potatoes and leave off the sugar. Otherwise this sounds like something I would eat! Thanks for sharing.
Personally, I can’t handle sweet potatoes or yams. There’s even a LONG running family joke at my expense over sweet potatoes. We lived out in the country and I had to throw some old sweet potatoes out to the chickens one time. I absolutely LOVED it because when I came back in the house I was able to proclaim, “Even the old ooster wouldn’t eat it!” I guess I was missing a few teeth, because my parents still tease me about the “ooster” because I couldn’t say rooster. Then again, I did have a speech impediment (at a younger age). 😉
Love this idea! Too bad my little guy polished off all the sweet potatoes. I may have to buy one more to try this. I have enough turkey to feed an army!
