Pancake Mix Recipe – Less Than Half the Cost of Store Bought

A few weeks ago my husband took the pancake mix box down from the cabinet to find very little left.  He did a quick search online and came up with this recipe to make his own.  It tasted just like normal, so I didn’t even know he had made the mix himself. Yesterday he measured and mixed up several batches and put them into a tupperware container, so we won’t be buying manufactured mixes again!

Pancake Mix Ingredients
1 Cup Flour
2 TBS sugar
2 TBS baking powder
1 tsp salt

When ready to cook, mix 1 and 1/4 cup of the mix with:
1 egg and 1 cup milk

You can make this mix for less than half the price of Bisquick if you shop the sales.  It’s also a great option to eliminate a product from your cabinets for families that don’t use bisquick very often.

If you’d like a cost comparison:

I often buy flour for $1.50 or less. There are 20 cups in a 5lb. bag, so at sale prices the cost per serving of flour is $.14.
A 4 lb. bag of sugar is also $1.50 or less with a coupon and sale.  There are 144 TBS of sugar in a 4 lb. bag, so the with a regular sale price the cost per serving of sugar is $.01.
A 4 oz can of baking powder is regularly on sale for $.50, but I have gotten mine for free the past several years with a coupon and sale. There are about 8 TBS in a can, so the cost per serving of baking powder is Free – $.13.
The price for a tsp of salt is of course negligible.
Total cost for 1 and 1/4 cup of mix is between $.15 and $.28.

A 40 oz box of Bisquick costs upwards of $3 and holds 9 and 1/3 cups of mix which is equal to 7.5 servings above.
7.5 x $.15 = $1.12  7.5 x $.28 = $2.10.
That’s half price or better!

If you give this a try, please let me know if you agree with the taste.
