Triple Chocolate Brownies in the Crockpot or Slow Cooker

I happened upon a delicious looking recipe on Martha Stewart the other day. We finally gave it a try this morning and boy does the house smell yummy.  Since I have a deficiency in the cooking department I didn’t exactly follow the directions on how to make them, and I didn’t have all the ingredients on hand so I did some substituting and they do in fact taste delicious!  I’ll show you what the recipe calls for and what I used / did instead.

(please ignore the mess on my counters LOL)
Triple Chocolate Brownies

Ingredients:
1 and 1/4 cups all purpose flour
1/4 cup unsweetened cocoa powder
3/4 tsp baking powder
1/2 tsp salt
1/2 cup butter stick cut into pieces
8 ounces bittersweet chocolate, chopped
1 cup sugar
3 eggs slightly beaten
1 cup semi sweet chocolate chips.

I only had margarine sticks, so we used that instead.
I only had 2 ounces of chocolate that was actually unsweetened, so I included 4 TBS sugar to make it bittersweet.  That meant I still needed 4 more ounces so I threw in about 5 or 6 ounces of dark chocolate and mint chips (what can I say, I like my chocolate!)

Directions:
Spray inside of cooker bowl and line with parchment paper that is also sprayed.
Wisk flour, powder, salt and cocoa.
Melt butter and chopped chocolate bar in microwave on medium, stirring every 30 seconds until smooth.
Add sugar and stir.
Add eggs and stir.
Add flour mix and chocolate chips and stir until barely moist.
Pour in crockpot and level.
Cover and cook on low for 3 and a half hours, then uncover for 30 mins more.
Remove cooker bowl  and loosen brownies with knife.
Let cool complete before removing from bowl and slicing.

Since I didn’t take the time to read, not only did I mix the sugar into the flour, but I melted all the chocolate together with the margarine (not just the bars)  They still turned out good, so I don’t think that I’ll bother with extra steps that don’t seem to make a difference! They were a bit on the cakey side for my taste and not as chocolatey as I expected, probably because they are minty.  I think next time I’ll make them with a mixture of semi sweet and milk chocolate chips and see how much sweeter they are.

Enjoy some scrumptious brownies, no matter which way you bake them!
