Baked Potato Soup Recipe

This is my mother-in-law’s baked potato soup recipe and it’s delicious. Of course nearly anything would be better with bacon in it right? :-)
It’s on the more expensive side as far as meals for our family go, but it does last for at least 3 meals.

Ingredients
12 slices bacon
4 green onions chopped
1/2 cup margarine
1 and 1/4 cups shredded cheddar cheese
4 large baked potatoes, peeled and cubed
2/3 cup all purpose flour
1 cup sour cream
7 cups milk
1 tsp salt
1 tsp ground black pepper

Directions
Cook bacon over medium heat until browned.   Drain, crumble and set aside.
In bacon grease, melt margarine and add flour.  Whisk until smooth.
Gradually stir in milk, whisking constantly until thickened.
Stir in potatoes and onions.
Bring to a boil, stirring frequently.  Reduce heat and simmer 10 minutes.
Add bacon, cheese, sour cream, salt and pepper.  Continue cooking until cheese melts.
