It’s time for another of my mother-in law’s recipes! I hope you’re enjoying this cookbook she made for her kids as much as I am. (Perhaps she should sell it!)
I first cooked Mexican chicken about 8 years ago from a church cookbook she had also given me. The two recipes and my adaptation are all very similar.
Ingredients
1 bag regular Doritos chips
1 cup chicken broth
4 cups cooked chicken chopped or shredded
1 can Rotel
1 can cream of chicken soup
1 can cream of mushroom soup*
1/2 onion chopped
8 oz shredded Mexican or Fiesta cheese*
Directions
Saute onion in butter.
Mix all ingredients except Doritos.
Place about half of the Doritos in baking dish and top with half of the mixture.
Repeat.
Cook for 45 minutes at 350 degrees.
Top with any remaining Doritos, cool slightly and serve.
*I like to leave out the can of mushroom soup. Instead I’ll use 6 oz Velveeta cheese cubed and 6 oz shredded cheese.
