Nacho Pie Recipe

About a year ago I asked for some recipe ideas because we’d been in a cooking rut for a while. You guys shared some great recipes that are easy to fix and that we really enjoy!  This is my variation of a recipe that reader Tiera suggested.  It’s become one of my favorites!

Ingredients:
1 can biscuits (I use butter tastin’ biscuits)
1 lb. ground beef, cooked and seasoned with taco seasoning
8 oz sour cream
1 cup shredded cheddar cheese
1 can refried beans (I make my own)
tortilla chips

Directions: 

Flour surface. Roll biscuits flat.  

Layer biscuits in casserole dish(es) so that the sides are partially covered.

Be sure the edges overlap and get squished together.

 

 

Layer taco meat on the bottom
and sour cream next.

I used substitution sour cream from milk and lemon juice this time for a fraction of the price! I didn’t use 8 oz because we prefer to serve some on top. I used this recipe to make my own sour cream topping.

 

 

 

The 3rd layer is your can of refried beans. 
I usually make mine myself, but this time I was out of pinto beans and substituted with black beans.  I was too lazy to pull out the mixer so they’re a little rough- but they worked.
 

Next layer on the cheddar cheese. 
Reserve some if you want to put on top when you serve.

 

 

 

 

The last layer is crushed tortilla chips.
You can use Doritos if you like them to be more flavored.  We were still finishing up the last of our Christmas clearance chips :-)

Bake at 350 for 25-30 mins.
Let cool about 5 mins before serving.

Top with sour cream and more shredded cheddar to taste.
