Chicken Nachos Recipe

As most of you know, my husband is the real chef at our house (Little Turkey is the chef in training of course).  A couple of years ago he found a half bag of tortilla chips that were stale and decided to use them up.  We almost always have pulled chicken in our freezer and since rotel and shredded cheese are staples around here, this nachos recipe was the result.  I must say they’re really good, and I love that he saved me from having to eat a half bag of stale chips!

Ingredients
tortilla chips (a great way to use up stale ones!)
*cooked chicken- shredded, pulled or finely chopped
8 oz fiesta cheese shredded
1 can rotel, drained (save the juice to make cheese dip)
sour cream
*pork works well too

Directions
layer tortilla chips on large baking tray
cover with about half the cheese
layer chicken, then rotel, then the rest of the cheese
bake at 350 degrees for 15-20 minutes.
cut into sandwich size pieces and serve hot with sour cream on the side.

So easy and so delicious!
