Live Below The Line

The Live Below the Line challenge runs for 5 days, from May 7th – 11th.  The challenge is to feed

yourself on less than $1.50 a day- the amount a U.S. person living in poverty would have to spend.

I’ve chosen to support Opportunity International with my challenge. Donations can be made through the Live Below the Line campaign page.  You can also get involved by participating in the challenge- can you feed yourself on just $1.50 a day?
Day 1 and Day 2 of the challenge my total was $1.38 each day.  For the most part I ate a
normal menu, with the exception of no M&Ms. Day 3 I blew the budget on a salad of all things!
Today I decided it was time to be intentional in trying to stay within the budget all day long:

     Breakfast

1 serving of Raisin Bran @ .24
4 oz. milk @ .10 (really hate that this gallon was more expensive than the last)
Slice of sausage that Little One left on her plate @ .10
Total: $.44
Lunch
2 servings rice @ .10
6.5 oz banana @ .24
1/4 cup milk @ .05
a pat of butter and a bit of sugar @ .01
Total: .40
Dinner
The plan for dinner tonight was pigs in a blanket using an expired can of butter biscuits.  But hubby cooked them this morning for his breakfast and left the other 6 in the toaster oven.  So I had to adapt my plans. Since hubby had a business dinner tonight it worked out well.
What was interesting to me was that I ended up eating more of the apple than I usually do because I thought I may not be able to eat anything else.  That’s part of what this challenge is about though- understanding that every little smidgeon of food makes a difference when you don’t have much!
That puts me at $1.38 for the day, and an average of $1.44 for the
week.  My tummy is starting to gurgle so
I may end up grabbing a snack to tide me over until breakfast.

I just finished my snack of 5 Ritz crackers and a 1/2 oz cream cheese. So that .09 puts me at $1.47 for the day and just over $1.46 for the week.

Check back tomorrow night for the final update!
