How to Make Chargrilled Chicken Salad

This month’s theme for the Dishing It Up recipe hop is recipes that don’t require any heat.  I’m going to fudge a little bit for this week.  Somewhere along the line the chicken for this salad does need to be grilled, but when I make a salad I pull it out of the freezer and let it defrost on a plate so I’m not using any heat to make it for that meal.  My husband is sweet enough to grill up 20 lbs. of meat at a time.  It really doesn’t take much more time since we have to wait for the coals to heat up and clean up no matter how much we grill. We’ll cut the meat up with the kitchen sheers and bag it up (reusing the ziplocs from last time) into meal size portions to freeze.  Then it’s so simple to put together meals like this.

I build my salads similar to the ones served at restaurants. 

Using a large bowl or platter layer:
torn lettuce
shredded fiesta blend cheese
shredded or chopped carrots
grilled chicken strips (seasoned with season salt before grilling)
cherry tomatoes
croutons (I use homemade croutons now)
bacon bits

Then serve with the dressing of your choice.  Now that is a salad to enjoy!

  3. I’ll have to follow this tip so I have cooked chicken in the freezer. Grilling is not my favorite thing, so grilling extra sounds like a great plan. (quick, easy meal too!)
