Candied Sweet Potatoes Recipe

My husband loves candied sweet potatoes.  Every year he would call his mother to get the recipe, until this year.  Why?  Because she included it in the book of family recipes she made for us!  Because this is such a sweet dish, you can fudge on the amounts and everything will still come out ok – that’s a must when I’m in the kitchen LOL.

Ingredients
8 large sweet potatoes
2 cups sugar (do not use artificial sweeteners!)
1 TBS nutmeg
1 tsp cinnamon
1 cup light karo
2 TBS butter

Directions
Fill large pot with one inch of water.
Add everything except potatoes and bring to a rolling boil.
Meanwhile peel and slice potatoes.
Boil mixture until it begins to thicken.
Add potatoes and cook on high, stirring occasionally until potatoes begin to soften.
Reduce heat and simmer until candied – about an hour.
You can serve them hot or cold, slice or mashed :-)
