No time for a Healthy Breakfast?

With 2 littles at home there is too much going on to cook breakfast very often. I could buy those precooked packages of bacon or pancakes but they are crazy expensive and thus not in the budget. So the only way we ever get to eat any meat at breakfast when DH is gone is for me to cook it all in advance.

When I cook up bacon, I cook the whole package-sometimes 2. What we don’t eat then, I’ll quick freeze on a tray and later put in a ziplock bag.  This keeps them from freezing and sticking together. Microwave a few pieces for about 15 seconds to add to a breakfast of cereal or grits and you’re all set to start the day. (BTW-We do the same with sausage and ham) Not only does it make for a quick breakfast, but I only have to clean the microwave or stove one time from all the grease! The same concept can also be applied to cutting carrot sticks, washing grapes and pulling them from the stems, or slicing tomatoes. Just store them in an airtight container in the fridge. See- cooking breakfast isn’t such a chore after all!
