$5 Dinners Week of 3/14 Average Cost of $4.56

My goal is to provide dinner for my
family for an average of $5 except on special
occasions. We don’t have to eat beans and rice to
accomplish this goal!
We typically only cook a main dish 4 or 5 times a week. Each
main dish cooked will serve 4-6, and the
leftovers will be for easy dinners on the weekend, or to freeze
for another week. This cuts down on cleaning,
cooking, and meal planning- saving us lots of time!

We’re starting to be overrun with leftovers again, so we’re only going to cook 4 times this week. 

Chicken Enchiladas, chips and cheese dip, green beans
This was my dish for the March Casserole Swap
tortillas @ 1.77 (yes, I paid full grocery store price!)
1 cup sour cream @ .64
3/4 cup chicken pulled @ 1.34
1 can cream of chicken soup @ FREE
2 cups mild cheddar shredded (4 oz) @ .75

velveeta and rotel for cheese dip @ 1.31
1 can green beans @ .25

Salmon Croquettes
3 5 oz cans of salmon @ 3.57
3 eggs @ .22
4 slices of toast (crumbled) @ .32
1/4 cup bell pepper @ .25
1/4 cup chopped green onions @ .25
garlic, cayenne pepper, rooster sauce, olive oil, lemon juice @ .25
1 can corn @ .54
2 apples @ .70
Total Cost: $6.10

Butter Garlic Pork Chops, Mashed Potatoes, Pineapple and Sweet Peas
1.5 lbs. pork chops @ 2.36
1/2 can of pineapple @ .38
2 large potatoes @ .40
1 can sweet peas @ .45
Total Cost: $3.59

Cereal, Eggs, Jelly on Toast
Hubby suggested that we start to use up some of the Malt-O-Meal stockpile we have by having a cereal night each week.  No complaints here-  I could eat pizza or cereal all day every day! We’ll see how long he lasts though :-)
