February Casserole Swap and Freezer Cooking

In January we talked about 3 ways to save some time and energy with your cooking plans. ( casserole swaps, dinner/Babysitting Swaps, and  Cooking Extra to Give Away at Random).  I was able to get a group of 5 ladies together to swap casseroles this month.  We exchanged meals on Monday and Tuesday.  I spent Monday afternoon cooking up 6 batches of my chicken, cheese and biscuit casserole (5 for the exchange and one for the coupon class I taught Monday night). Now my fridge and freezer have 5 different dishes ready to feed my family with no preparation needed on my part.  Thanks to this exchange, during the month of February we will enjoy

My cooking was all done on Monday afternoon, all the dishes cleaned and put away, and now I’ll enjoy 5 cook free nights this month. I also cooked up an extra 5 lbs. of chicken while I was at it Monday.  I pulled it and put it into 4 freezer bags for other dishes that I’ll cook this that call for pulled chicken.  Honestly, I’m not sure that we’ll need it this month though as the 5 dishes above will last our little family for quite a while.  I am looking forward to several cook and clean free nights this month- without the expense of eating out.  Maybe I’ll manage to find time for an afternoon nap at least once this month….. Smiley

  2. I participated in the swap and loved it so much that I’m looking to do it again with a different group within the next week or two.

  3. That’s great anon! I’m glad it was helpful and that you’ll be getting more people involved to save them some time as well. I think the casseroles in my freezer from the swap will last our little family at least 15 meals for us this month. Hubby will be disappointed that he doesn’t get to experiment more when he’s home. :-)
